Sausage Sandwiches with Red Onion and Rosemary Relish
You will need
- 6 Alf Turner’s Hair of the Hog Sausages
- 2 Large red onions, finely sliced
- 15mlsp (1tbsp) Oil
Knob of butter
- 2x5mlsp (2tsp) Sugar
- 15mlsp (1tbsp) Fresh rosemary, finely chopped
- 15mlsp (1tbsp) Balsamic vinegar
- Seeded brown or white bread slices
What to do
Heat the oil in a small pan with a well fitting lid. Add the onion slices, knob of butter and sugar. Place the lid on the pan and allow the onions to gently soften.
After about 10 minutes add the rosemary and continue cooking until the onions are soft and beginning to caramelise (give the pan a gentle shake from time to time to prevent the onions catching).
Remove the pan from the heat, stir in the balsamic vinegar and allow to cool.
Pre-heat the grill. Grill the sausages under a medium heat turning occasionally until the skins are golden brown and the juices run clear.
Serve the sausages immediately in slices of your favourite bread (slit the sausages lengthways to lay them on the bread) with a dollop of relish.
