Pigs in Pastry Blankets
You will need
- 6 Alf Turner’s Best of British Sausages
- 500g Packet of Puff pastry
- Tomato Ketchup/Onion Relish/Dijon Mustard
- Milk to glaze
- 2x15mlsp (2tbsp) Sesame seeds
What to do
Recipes for hand held snacks are always useful to have in your repertoire – picnics, parties, lunch boxes or even sustenance for the first 11 fixture!
Preheat the oven to 220º C, Gas Mark 8.
Cut the sausages in half lengthways.
Roll out the pastry to the thickness of a 10p piece and divide into 12 small squares approx 11cm wide. Spread each pastry square with 5mlsp (1tsp) of ketchup, onion relish or Dijon mustard, leaving a 1cm space at the edge of the pastry.
Place a half sausage diagonally on each pastry square from one corner to the opposite corner. Brush the edges of the pastry with a little milk and then fold the flaps of pastry around the sausage to form a roll with the sausages peeking out at each end. Brush with a little more milk and sprinkle with sesame seeds.
Place the pigs in blankets on a greased baking sheet and bake for 20 minutes until the pastry is golden brown.
Serve hot or cold.
