Full Box Pork Belly
You will need
- 1 kg boneless pork belly, skin on and scored
- 1 tsp carolina reaper seasoning
- 1 tsp cumin & coriander seasoning
- 1 tsp szechuan seasoning
- 1 tsp lemon & fennel seasoning
- 1 tbsp rapeseed oil
- 1 litre apple juice
- 1 1/4 apple
- 1 1/4 onion
- 1 chopped carrot
- 2 star anise
- Good spring of thyme
- 2 peeled cloves of garlic

Mix the Carolina reaper sasoning, cumin & coriander seasoning, Szechuan seasoning and the lemon & fennel seasoning together.
Pat dry the pork belly with some kitchen paper then rub the seasoning mix all over the pork. For best results marinade over night.
In a roasting tray add the onion, apple, carrot, garlic, star anise, thyme and apple juice and rub the pork with a little oil place on top.
Place the tray in the a pre-heated oven at 220c for 30 minutes to crisp the skin and then reduce the tempurature to 160c and cook slowly for a further 2 hours. Finally increase the tempurature to 200c to finish the crackling. Top up the apple juice with a little water as required.
Remove from the oven and leave to rest for 30 minutes.
Slice through the crunchy crackling and toasted spice and enjoy with salad or vegetables.
If you like it spicy, mix tthe carolina seasoning with some mayonnaise and a squeeze of lemon and serve as the perfect dipping sauce.
